Daily Report (Industrial Training Center) 24-29/7/2017

Heyy Yow Guyss..
Back again in Rei's Kitchen..
This time im gonna tell you my activities at industrial training center or we called BDI, 
we learn how to prepare all Chocolate based ingredients on "Expert Production of Various Processed Chocolate Based"
So at first day, we was learning about how to make a liquor, chocolate powder, choco butter, and candy (processes chocolate).
I also got an nice roommate who really neat and dislike messy room.
Second day, we was doing an practice at Poltekpar Kitchen we learn how to make 3 in 1 chocolate, Ginger Chocolate, and chocolate jam. we also prepared the pie for tomorrow.
The third day, we was doing thr next lesson about chocolate which is Chocolate pie, brownies, and chocolate almond cookies. we do lot of mistake that we should re-make the whole work. We also meet an volunteer from netherland, his name is Mr. Ed he is an expert for pastry and bakery production and he was giving us a good advice which give me more knowledge about pastry and bakery.
The Fourth day, we was doing an assesment about what we make at the last 2 days, we fill the assesment papper and get the task for tomorrow and I get chocolate pie.
The fifth day, We doing an competence test which proof us competence or not competence, I made an chocolate pie with my partner akmal which my junior, we do good and we succeed. I am so proud with my product knowing that I am so weak at pastry and bakery.
The Sixth day, we finally face the last day Where the announcement results out. and its turns out.. everbody was Competence which make us so excited, that day is also closing of this training.

And this is the recipe of the product that I made on this training:
1. 3 in 1 Chocolate

  • 1,5kg Dark Chocolate
  • 25gr Chocolate Powder
  • 1500ml Cream
  • To taste Sugar
How to make:
Heat dark chocolate, then put sugar Insert chocolate powder, then mix well and all the soluble ingredients Enter the milk, then cream and stir until blended Lift and pour into the cup and give a sprinkling of cinnamon as a decoration. And ready to serve

2. 3 in 1 Chocolate Ginger
  • 20gr Peeled Ginger
  • 10gr Cinnamon
  • 6gr Chocolate Powder
  • 1 Stem of Lemongrass
  • 1 Pandan Leaf
  • 150gr Brown Sugar
  • 500gr Fresh Milk
  • 3pcs Pepper Seed
  • 500ml Water

How to make:
Burn ginger, crush and set aside
Boil water and then boil all ingredients except brown sugar, chocolate powder, and milk
After boiling enter the brown sugar, mix well

Enter the chocolate powder and milk, stew for a while, and ready to serve while warm

3. Chocolate Jam

  • 3tbsp Butter
  • 100ml Chocolate Milk
  • 250gr Dark Chocolate
How to make:

Enter butter and liquid milk and bring to a boil

Mix with dark chocolate pieces and stir until melted

Chocolate jam ready to be combined with various breads.

4. Dodol Chocolate
  • 350gr Glutinous Rice Flour
  • 100gr Gula Pasir
  • 150gr Chocolate Powder
  • 1kg Brown Sugar
  • 5gr Salt
  • 400ml Thick Coconut Milk
  • 600ml Coconut Milk (Not thick)
How to make:
Insert 200 ml of water into the container then put the coconut milk, brown sugar, and sugar, then strain after mixed Strain the Chocolate powder and glutinous rice flour, then insert the filtered material in the container and insert thick coconut milk and salt and stir until smooth while heated over the small fire. Put the liquid into the dough and then stir until evenly distributed After the liquid is shrunk, and the surface is shiny then put dodol dough onto the cutting board for printing.

5. Brownies

  • 300ml Vegetable Oil
  • 12pcs Egg
  • 250gr Flour
  • 50gr Chocolate Powder
  • 420gr Dark Chocolate
  • 300gr Sugar
How to make:
Mix sugar and eggs until stiff, then set aside Melt dark chocolate with sabayong, then add vegetable oil, mix well Strain dry ingredients simultaneously, then mix with the first dough until blended Insert chocolate that has been melted, Pour into the mold Bake with 180 celcius After cook perfectly, serve.

6. Pie Chocolate
  • 30ml Cold Water
  • 3gr Salt
  • 90gr Margarin
  • 150gr Flour
  • 280gr Dark Chocolate
  • 125ml Milk
  • 1pcs Egg Yolk
How to make:
-For skin: Mix flour, margarine, egg yolk, cold water, fine salt, then mix well into dough, should stir it for a while so that the margarine is not exposed to heat, and Put the dough into the refrigerator. Basting pie mold with margarine, put the pie dough into the mold, then stab the bottom of the dough with a fork and give the pie rock so that the base of the pie skin does not expand during roasting Bake for 15 minutes with a temperature of 175 degrees Celsius, after cook lift and chill -For Filling: Mix the cold water, liquid milk, dark chocolate, and margarine, then boiled using a small fire until well blended After that enter the dough filling into the pie skin and then insert into the refrigerator until the filling is slightly hardened.

7. Crispy Almond Chocolate

  • 25gr Milk Powder
  • 2pcs Egg
  • 100gr Palm Sugar
  • 125gr Butter
  • 100gr Almond
  • 200gr Flour
  • 50gr Chocolate Powder
How to make:
Beat the butter with palm sugar until soft and slightly fluffy Add the egg yolks, mix well Put the flour, chocolate powder, and milk while in sieve, add icing and stir until well blended Chop roughly almonds and add them into the dough Take the dough approximately 1 teaspoon, and put on a pan that has been smeared butter, press the dough with a flat fork, should not be too thick dough so that the dough can be crispy. Repeat until the dough runs out Oven with temperature 170 degree celcius with time 15 minutes. This process is very important because the condition of the dough is thin and made from brown will easily burned if we dont paid attention on the baking procces. Once cooked, chill and put in an airtight container.
